During Argentina's long process of independence in the 19th century, the custom of drinking mate became entrenched in national folklore. The "gauchos" (a type of Argentine cowboy) adopted mate as part of their culture, along with horseback riding and wearing leather clothing. They drank mate in groups, for breakfast, lunch, dinner, and before bed.
Yerba mate is grown in Argentina, Paraguay, and southern Brazil, where the soil, temperature, and humidity conditions are ideal. Like those gauchos of yesteryear, mate is part of the everyday life of the average Argentinian. It is consumed equally in homes, offices, parks, universities, and plazas, not only for its properties as an infusion, but also for its role as a social bond.
